Each transaction is signed together with a set of decoys pulled from the blockchain. An outside observer sees the group, not which member actually spent the coins.
Every payment goes to a fresh one-time address. The address you hand out is never written to the blockchain, so looking it up does not list the payments you received.
Amounts are hidden on the blockchain. The network can still check that no XMR was created out of thin air, without showing how much moved.
A new transaction first hops through a few random nodes before it spreads to the whole network. That makes it harder to tie a transaction to the IP address that sent it.
